Billy Rosenzweig has spent his career cooking in other people's kitchens. Billy's Phillys is the one he's building for himself.

He's an Erie cook through and through โ€” years on the line at community events and fundraisers, cooking competitions around town, and today he runs the kitchen as kitchen manager at 5 Iron Golf in downtown Erie. If you've eaten well at an Erie event in the last few years, there's a decent chance Billy had a hand in it.

He's also a Deadhead โ€” several shows deep, fluent in the parking-lot economy of grilled cheese and good company. So when it came time to build his own menu, there was never a question about the theme. The sandwiches carry the song titles. The plain grilled cheese on the menu โ€” The Lot โ€” is a straight nod to the folks who fed the crowd in the lot before the show. And the Casey Jones, rib-eye and mushrooms with Alfredo lines run across the top, is his personal favorite.

But Billy will be the first to tell you: none of this happens alone. Behind every sandwich on this menu stands his wife, Sarah โ€” his best friend and the love of his life. She believed in this dream before it had a name, and she's stood beside him every step of the way since. Right there with them is their son, Will. Sarah and Will aren't just Billy's biggest supporters โ€” they're his cooking-competition team, the three of them side by side at the stove, and together they've brought home several trophies. When the work's done, the same three pile in and hit the road for the shows, singing along like family does.

Billy's Phillys is being built the way the music was played: in the open, with good people, one show at a time. It starts with pop-ups and a growing Erie following โ€” when the doors are ready to open, the news lands here and on social first. And when those doors finally open, Sarah and Will will be standing right there โ€” because in every way that matters, this shop is theirs too.
